Microbiology of food products

 

Bacterial count provisions

  • aerobic mesophilic count, lactic acid bacteria, Enterobacteriaceae / Escherichia coli, coagulase positive staphylococci, yeasts / molds, sulfite-reducing clostridia, Bacillus cereus, Listeria monocytogenes
  • Determination of surface colony count of carcasses

detection of

  • Salmonella serotyping, Listeria monocytogenes, Campylobacter spp.

Sensory examination

  • meat and meat products, milk and milk products (experts with DLG Examiner passport or passport from the Saxon State Office for Environment, Agriculture, Geology)

Investigation of preserved food

  • microbiological stability of blood preserves (stability control), study of half, three quarter and boiler canned
